Potato Salad

Smack-It Carolyn’s Hot Potato Salad



3 -4 red or white potatoes
2 hard boiled eggs chopped
2 tablespoon dill relish
1 teaspoon prepared mustard
3 tablespoons salad dressing or mayonaise
salt and pepper to taste
1/8 cup milk (optional)


Boil eggs until hard, peel and chop into small pieces.    Cut potatoes into large square pieces. Boil in water until soft.  Drain potatoes, but leave in pan. Place salad dressing or mayonnaise in separate bowl.  Add PepperSmack™ pepper paste, coarse pepper or pepper dust to dressing or mayonnaise.  The size of the smack depends on your heat tolerance.  Add dill relish and mustard to mixture.  Add this mixture to pan containing potatoes.  Stir potatoes and mixture  well.  Salt and pepper to taste.  If needed as thinner, add small amount of milk and stir into mixture.  Put top on pan and leave on stove until ready to serve.  Serve hot.  When served, additional PepperSmack™ pepper paste, coarse pepper or pepper dust can be used on finished potato salad or plopped on plate and eaten with the meal.
