Chicken Salad

Smack-It Chicken Salad


1 cooked rotisserie chicken (as a quick substitute use 2 cans Costco’s Kirkland canned chicken)
3/4 cup dried cranberries
3/4 cup of purple grapes, halved
½ cup walnuts, chopped
1 cup celery, chopped
1 1/2 apples, cored and chopped
½ cup red onion, chopped
3/4 cup real mayonnaise
2 tablespoons PepperSmack™ pepper paste (size of smack depends on heat tolerance)
2 teaspoons dried tarragon
3 tablespoons olive oil
1 tablespoon apple cider vinegar
2 teaspoons lemon juice
salt to taste
pepper to taste


Shred chicken and combine with next six ingredients.  In a separate bowl, mix mayonnaise and pepper paste.  Add to chicken mixture and mix well.  In a separate bowl, mix olive oil, vinegar, lemon juice and tarragon.  Pour over chicken mixture and mix well.  Add salt and pepper to taste.
